- 1 lb ground beef
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1 avocado, sliced
- 4 cups mixed greens
- 1/4 cup red onion, thinly sliced
- 1/4 cup mayonnaise (Whole30 compliant)
- 1 tbsp mustard
- Salt and pepper to taste
Instructions
- Season the ground beef with salt and pepper.
- Heat a skillet over medium-high heat and add the beef.
- Cook the beef, breaking it up with a spoon, until browned and cooked through (about 6–8 minutes).
- Taste and adjust seasoning with more salt or pepper if needed.
- Whisk together the mayonnaise and mustard in a small bowl to make the dressing.
- Toss the mixed greens lightly with a little dressing or leave plain for people to add their own.
- Divide greens among bowls.
- Arrange cooked beef, cherry tomatoes, cucumber, red onion, and avocado slices over the greens.
- Drizzle the remaining dressing over each bowl or serve on the side.
- Serve right away and enjoy.
Notes
For best texture, store components separately and assemble just before eating. Slice avocado just before serving to prevent browning.
