Whole30 Burger Bowl

Ingredients

  • 1 lb ground beef
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 avocado, sliced
  • 4 cups mixed greens
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup mayonnaise (Whole30 compliant)
  • 1 tbsp mustard
  • Salt and pepper to taste

Instructions

  1. Season the ground beef with salt and pepper.
  2. Heat a skillet over medium-high heat and add the beef.
  3. Cook the beef, breaking it up with a spoon, until browned and cooked through (about 6–8 minutes).
  4. Taste and adjust seasoning with more salt or pepper if needed.
  5. Whisk together the mayonnaise and mustard in a small bowl to make the dressing.
  6. Toss the mixed greens lightly with a little dressing or leave plain for people to add their own.
  7. Divide greens among bowls.
  8. Arrange cooked beef, cherry tomatoes, cucumber, red onion, and avocado slices over the greens.
  9. Drizzle the remaining dressing over each bowl or serve on the side.
  10. Serve right away and enjoy.

Notes

For best texture, store components separately and assemble just before eating. Slice avocado just before serving to prevent browning.
