Instructions
- Prepare the strawberries: In a medium saucepan, combine the chopped strawberries and water. Cook over medium heat for about 5-7 minutes, stirring occasionally until the strawberries start to break down.
- Add sugar: Stir in the sugar and continue to cook for another 5 minutes, allowing the mixture to thicken slightly.
- Strain: Remove the pan from the heat. If you prefer a smooth syrup, strain the mixture through a fine mesh sieve to remove the pulp.
- Finish the syrup: Return the strained syrup to the pan, stir in the lemon juice, and cook for an additional 2-3 minutes, allowing the syrup to reach your desired consistency.
- Optional flavoring: For extra flavor, stir in the vanilla extract at the end of cooking.
- Cool and store: Let the syrup cool before transferring to a jar or bottle. Store it in the refrigerator for up to 2 weeks.
Notes
You can adjust the sweetness by adding more or less sugar depending on your preference. If you prefer a thicker syrup, you can simmer it for a longer period to reduce it further.
For a unique twist, try adding a dash of cinnamon or a few sprigs of fresh mint during the cooking process.
