- 2 medium sweet potatoes, peeled and diced
- 1 cup cooked quinoa
- 1 can (15 oz) black beans, drained and rinsed
- 1/2 cup breadcrumbs
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Boil the sweet potatoes in a pot of water until tender, around 15-20 minutes.
- Drain the sweet potatoes and mash them in a large bowl until smooth.
- Add cooked quinoa, black beans, breadcrumbs, minced garlic, smoked paprika, cumin, salt, and pepper to the mashed sweet potatoes. Mix well until fully combined.
- Preheat your oven to 400°F (200°C).
- Shape the mixture into small meatballs and place them on a lined baking sheet.
- Bake the meatballs for 20-25 minutes, or until they are golden brown and firm to the touch.
- Serve with your favorite sauce or over pasta, and enjoy!
Notes
Make sure to mash the sweet potatoes well to achieve a smooth mixture. Adjust seasonings to your liking; feel free to add herbs or spices that you enjoy.
