Vegan Sweet Potato Meatballs

  • 2 medium sweet potatoes, peeled and diced
  • 1 cup cooked quinoa
  • 1 can (15 oz) black beans, drained and rinsed
  • 1/2 cup breadcrumbs
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Boil the sweet potatoes in a pot of water until tender, around 15-20 minutes.
  2. Drain the sweet potatoes and mash them in a large bowl until smooth.
  3. Add cooked quinoa, black beans, breadcrumbs, minced garlic, smoked paprika, cumin, salt, and pepper to the mashed sweet potatoes. Mix well until fully combined.
  4. Preheat your oven to 400°F (200°C).
  5. Shape the mixture into small meatballs and place them on a lined baking sheet.
  6. Bake the meatballs for 20-25 minutes, or until they are golden brown and firm to the touch.
  7. Serve with your favorite sauce or over pasta, and enjoy!
