Vegan Coffee Cake

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup almond milk (or any plant-based milk)
  • 1/2 cup maple syrup
  • 1/4 cup vegetable oil
  • 1/4 cup brown sugar
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 cup chopped nuts (optional)
  • 1/2 cup brown sugar (for topping)
  • 1/4 cup oatmeal (for topping)
  • 1/4 cup coconut oil (melted, for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking pan.
  2. In a large bowl, combine the flour, brown sugar, baking powder, and salt.
  3. In another bowl, mix the almond milk, maple syrup, vegetable oil, and vanilla extract.
  4. Pour the wet mixture into the dry mixture and stir until just combined. If using, fold in the chopped nuts.
  5. Spread the batter evenly into the prepared baking pan.
  6. In a small bowl, mix together the brown sugar, oatmeal, and melted coconut oil. Sprinkle this mixture evenly over the cake batter.
  7. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

Don’t overmix to keep the cake tender. Use fresh baking powder for best results.
