- 1 1/2 cups all-purpose flour
- 1 cup almond milk (or any plant-based milk)
- 1/2 cup maple syrup
- 1/4 cup vegetable oil
- 1/4 cup brown sugar
- 1 tablespoon baking powder
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1/2 cup chopped nuts (optional)
- 1/2 cup brown sugar (for topping)
- 1/4 cup oatmeal (for topping)
- 1/4 cup coconut oil (melted, for topping)
Instructions
- Preheat your oven to 350°F (175°C) and grease a baking pan.
- In a large bowl, combine the flour, brown sugar, baking powder, and salt.
- In another bowl, mix the almond milk, maple syrup, vegetable oil, and vanilla extract.
- Pour the wet mixture into the dry mixture and stir until just combined. If using, fold in the chopped nuts.
- Spread the batter evenly into the prepared baking pan.
- In a small bowl, mix together the brown sugar, oatmeal, and melted coconut oil. Sprinkle this mixture evenly over the cake batter.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Cool in the pan for a few minutes before transferring to a wire rack to cool completely.
Notes
Don’t overmix to keep the cake tender. Use fresh baking powder for best results.
