- 1 1/2 cup almond flour
- 1/4 cup oat flour
- 1/3 cup melted refined coconut oil
- 1/4 cup pure maple syrup
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1 cup berries (fresh or frozen)
- 1 1/2 tbsp pure maple syrup
- 1 tbsp water
- 1/2 tsp cornstarch
- 1/2 cup oat flour
- 1/4 cup oats
- 2 tbsp almond flour
- 1/4 cup melted refined coconut oil
- 1 tbsp pure maple syrup
- 1/2 tsp vanilla extract
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
- Mix together the almond flour, oat flour, melted coconut oil, maple syrup, vanilla extract, and salt in a large bowl until a dough forms.
- Press about two-thirds of the dough into the bottom of the prepared baking dish to create the base layer.
- In another bowl, combine the berries, 1 1/2 tablespoons of maple syrup, water, and cornstarch. Stir gently to coat the berries.
- Spread the berry mixture evenly over the crust in the baking dish.
- Add the oats and remaining crumble mixture on top of the berries, sprinkling it evenly to create a topping.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden brown.
- Cool in the pan on a wire rack before cutting into bars.
Notes
Use mixed berries for a variety of flavors. Fresh or frozen work well! Press the crust firmly to ensure it holds together when baked. Let the bars cool completely for easier slicing.
