Vegan Berry Crumble Bars

  • 1 1/2 cup almond flour
  • 1/4 cup oat flour
  • 1/3 cup melted refined coconut oil
  • 1/4 cup pure maple syrup
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1 cup berries (fresh or frozen)
  • 1 1/2 tbsp pure maple syrup
  • 1 tbsp water
  • 1/2 tsp cornstarch
  • 1/2 cup oat flour
  • 1/4 cup oats
  • 2 tbsp almond flour
  • 1/4 cup melted refined coconut oil
  • 1 tbsp pure maple syrup
  • 1/2 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  2. Mix together the almond flour, oat flour, melted coconut oil, maple syrup, vanilla extract, and salt in a large bowl until a dough forms.
  3. Press about two-thirds of the dough into the bottom of the prepared baking dish to create the base layer.
  4. In another bowl, combine the berries, 1 1/2 tablespoons of maple syrup, water, and cornstarch. Stir gently to coat the berries.
  5. Spread the berry mixture evenly over the crust in the baking dish.
  6. Add the oats and remaining crumble mixture on top of the berries, sprinkling it evenly to create a topping.
  7. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown.
  8. Cool in the pan on a wire rack before cutting into bars.

Notes

Use mixed berries for a variety of flavors. Fresh or frozen work well! Press the crust firmly to ensure it holds together when baked. Let the bars cool completely for easier slicing.
