Vegan Applesauce Cake

  • 1/2 cup coconut oil or vegetable oil, melted

  • 1 cup all-purpose flour
  • 1/2 cup whole wheat flour

  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 1/4 cup plant-based milk (optional for desired consistency)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a cake pan.
  2. Mix the melted coconut oil and brown sugar together in a large bowl until well combined.
  3. Add the applesauce and vanilla extract to the mixture, stirring until smooth.
  4. Combine the all-purpose flour, whole wheat flour, baking soda, cinnamon, nutmeg, and salt in another bowl.
  5. Gradually stir the dry ingredients into the wet mixture until just combined. If you want a lighter texture, add plant-based milk until you reach your desired consistency.
  6. Pour the batter into the prepared cake pan and smooth the top.
  7. Bake for about 30-35 minutes or until a toothpick inserted in the center comes out clean.
  8. Cool the cake in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes
