- 1 1/2 cups applesauce
- 1/2 cup coconut oil or vegetable oil, melted
- 1 cup brown sugar
- 1 cup all-purpose flour
- 1/2 cup whole wheat flour
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp salt
- 1 tsp vanilla extract
- 1/4 cup plant-based milk (optional for desired consistency)
Instructions
- Preheat your oven to 350°F (175°C) and grease a cake pan.
- Mix the melted coconut oil and brown sugar together in a large bowl until well combined.
- Add the applesauce and vanilla extract to the mixture, stirring until smooth.
- Combine the all-purpose flour, whole wheat flour, baking soda, cinnamon, nutmeg, and salt in another bowl.
- Gradually stir the dry ingredients into the wet mixture until just combined. If you want a lighter texture, add plant-based milk until you reach your desired consistency.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for about 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Cool the cake in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
Check for doneness a few minutes before the timer goes off. Consider adding nuts or raisins for extra texture!
