- 1 cup quinoa
- 2 cups water
- 1 cup red bell pepper, diced
- 1 cup cucumber, diced
- 1 cup shredded carrots
- 1 cup green onions, sliced
- 1/2 cup chopped fresh cilantro
- 1/2 cup chopped peanuts
- 1/4 cup sesame seeds
- 1/4 cup soy sauce
- 2 tablespoons lime juice
- 1 tablespoon honey
- 1 tablespoon sesame oil
- 1 teaspoon grated fresh ginger
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water in a fine-mesh strainer.
- Bring the water to a boil in a medium saucepan, then add the rinsed quinoa.
- Reduce the heat to low and cover, simmering for about 15 minutes, or until the water is absorbed.
- Fluff the quinoa with a fork and let it cool to room temperature.
- Combine the red bell pepper, cucumber, shredded carrots, green onions, cilantro, and peanuts in a large bowl.
- In a separate bowl, whisk together the soy sauce, lime juice, honey, sesame oil, ginger, garlic, salt, and pepper to make the dressing.
- Add the cooled quinoa to the vegetable mixture and pour the dressing over it. Toss everything to combine.
- Sprinkle sesame seeds on top for an extra crunch.
Notes
Rinse the quinoa thoroughly to remove any bitterness. Chill before serving to enhance flavors.
