Thai Quinoa Crunch Salad

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 cup red bell pepper, diced
  • 1 cup cucumber, diced
  • 1 cup shredded carrots
  • 1 cup green onions, sliced
  • 1/2 cup chopped fresh cilantro
  • 1/2 cup chopped peanuts
  • 1/4 cup sesame seeds
  • 1/4 cup soy sauce
  • 2 tablespoons lime juice
  • 1 tablespoon honey
  • 1 tablespoon sesame oil
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water in a fine-mesh strainer.
  2. Bring the water to a boil in a medium saucepan, then add the rinsed quinoa.
  3. Reduce the heat to low and cover, simmering for about 15 minutes, or until the water is absorbed.
  4. Fluff the quinoa with a fork and let it cool to room temperature.
  5. Combine the red bell pepper, cucumber, shredded carrots, green onions, cilantro, and peanuts in a large bowl.
  6. In a separate bowl, whisk together the soy sauce, lime juice, honey, sesame oil, ginger, garlic, salt, and pepper to make the dressing.
  7. Add the cooled quinoa to the vegetable mixture and pour the dressing over it. Toss everything to combine.
  8. Sprinkle sesame seeds on top for an extra crunch.

Notes

Rinse the quinoa thoroughly to remove any bitterness. Chill before serving to enhance flavors.
