- 250g halloumi cheese, sliced
- 4 tbsp sweet chili sauce
- 4 soft flour tortillas
- 1 cup mixed bell peppers, sliced
- 1 cup cucumber, sliced
- 2 tbsp freshly squeezed lime juice
- 1 tbsp olive oil
Instructions
- Heat the olive oil in a frying pan over medium heat.
- Add the halloumi slices and fry for 2-3 minutes on each side until golden and crispy.
- Remove the halloumi from the pan and set it aside.
- Sauté the bell peppers in the same pan for 2 minutes until just tender.
- Warm the tortillas briefly in a dry skillet or microwave.
- Assemble the wraps by spreading sweet chili sauce on each tortilla, adding sautéed peppers, cucumber slices, and crispy halloumi.
- Drizzle with lime juice before folding the wraps tightly.
Notes
Don’t overcook the halloumi; you want it crispy, not rubbery. Feel free to add other veggies like avocado or spinach.
