Sweet Chili Halloumi Wraps

  • 250g halloumi cheese, sliced
  • 4 tbsp sweet chili sauce
  • 4 soft flour tortillas
  • 1 cup mixed bell peppers, sliced
  • 1 cup cucumber, sliced
  • 2 tbsp freshly squeezed lime juice
  • 1 tbsp olive oil

Instructions

  1. Heat the olive oil in a frying pan over medium heat.
  2. Add the halloumi slices and fry for 2-3 minutes on each side until golden and crispy.
  3. Remove the halloumi from the pan and set it aside.
  4. Sauté the bell peppers in the same pan for 2 minutes until just tender.
  5. Warm the tortillas briefly in a dry skillet or microwave.
  6. Assemble the wraps by spreading sweet chili sauce on each tortilla, adding sautéed peppers, cucumber slices, and crispy halloumi.
  7. Drizzle with lime juice before folding the wraps tightly.

Notes

Don’t overcook the halloumi; you want it crispy, not rubbery. Feel free to add other veggies like avocado or spinach.
