- 2 cups sugar cookie dough
- 16 ounces cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1/2 cup sour cream
- 1/4 cup all-purpose flour
- 1/2 teaspoon salt
Instructions
- Preheat the oven to 325°F (163°C).
- Press the sugar cookie dough evenly into the bottom of a 9-inch springform pan to form the crust.
- Beat the cream cheese in a large bowl until smooth.
- Add the granulated sugar and vanilla, mix until combined.
- Incorporate the eggs one at a time, blending between each addition.
- Add the sour cream, flour, and salt, mixing until the batter is smooth and homogenous.
- Pour the cheesecake batter over the sugar cookie crust in the springform pan.
- Bake for 45-50 minutes, or until the center is set and a toothpick comes out clean.
- Cool the cheesecake in the pan for about an hour before transferring it to the fridge to chill for at least 4 hours, ideally overnight.
Notes
Allow cream cheese to soften and don’t overmix the batter for a light and fluffy cheesecake.
