Sugar Cookie Cheesecake

  • 2 cups sugar cookie dough
  • 16 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1/2 cup sour cream
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Press the sugar cookie dough evenly into the bottom of a 9-inch springform pan to form the crust.
  3. Beat the cream cheese in a large bowl until smooth.
  4. Add the granulated sugar and vanilla, mix until combined.
  5. Incorporate the eggs one at a time, blending between each addition.
  6. Add the sour cream, flour, and salt, mixing until the batter is smooth and homogenous.
  7. Pour the cheesecake batter over the sugar cookie crust in the springform pan.
  8. Bake for 45-50 minutes, or until the center is set and a toothpick comes out clean.
  9. Cool the cheesecake in the pan for about an hour before transferring it to the fridge to chill for at least 4 hours, ideally overnight.

Notes

Allow cream cheese to soften and don’t overmix the batter for a light and fluffy cheesecake.
