Ingredients
For the Dough
2 cups whole wheat flour
1 cup all-purpose flour
1 tsp salt
1 cup water (approx.)
2 tbsp oil
For the Spicy Potato Filling
3 medium-sized potatoes (boiled and mashed)
2–3 green chilies (finely chopped)
1 tsp ginger (grated)
1 tsp cumin seeds
1/2 tsp turmeric powder
1 tsp red chili powder
1 tsp garam masala
2 tbsp fresh coriander (chopped)
Salt to taste
2 tbsp oil
Optional Toppings
Chaat masala
Butter or ghee
Fresh cilantro
Lemon juice
Instructions
Step 1: Prepare the Dough
In a large mixing bowl, combine whole wheat flour, all-purpose flour, and salt.
Gradually add water and knead until the dough comes together. It should be soft but not sticky.
Add oil and knead for another 2-3 minutes until the dough is smooth and elastic.
Cover the dough with a damp cloth and let it rest for 20-30 minutes.
Step 2: Make the Spicy Potato Filling
Heat oil in a pan and add cumin seeds. Let them sizzle for a few seconds.
Add grated ginger and chopped green chilies. Sauté for a minute.
Add mashed potatoes and mix well.
Add turmeric powder, red chili powder, garam masala, and salt. Stir until everything is well combined.
Turn off the heat and mix in the chopped coriander. Your filling is ready!
Step 3: Assemble the Stuffed Flatbread
Divide the dough into equal-sized balls (about the size of a lemon).
Roll out each ball into a small circle (about 4-5 inches in diameter).
Place a spoonful of the spicy potato filling in the center of the circle.
Bring the edges of the dough together to seal the filling inside.
Gently flatten the stuffed ball and roll it out into a flatbread (about 6-7 inches in diameter).
Step 4: Cook to Perfection
Heat a skillet or tawa over medium heat.
Place the rolled-out flatbread on the skillet and cook for 1-2 minutes on each side.
Brush with a little oil or butter for extra flavor and cook until golden brown spots appear.
Repeat with the remaining dough and filling.
Notes
Pro Tip: Letting the dough rest makes it easier to roll and prevents tearing.
Adjust the spice level to your preference by reducing or increasing the amount of green chilies and red chili powder.
Don’t overstuff the flatbread, or the filling may spill out while cooking.
