- 1/2 teaspoon cream of tartar

Instructions
- Whisk together the dry ingredients: In a large bowl, mix the flour, ginger, cinnamon, cloves, nutmeg, baking soda, and salt.
- Cream the butter and sugar: In another bowl, beat the softened butter and brown sugar together until light and fluffy.
- Add the molasses and egg: Mix in the molasses and the egg until well combined.
- Combine the mixture: Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
- Chill the dough: Wrap the dough in plastic wrap and refrigerate for at least 1 hour, or overnight.
- Preheat the oven: Preheat your oven to 350°F (175°C).
- Roll out the dough: On a floured surface, roll out the dough to about 1/4-inch thick.
- Cut out the cookies: Use cookie cutters to cut out gingerbread men shapes and place them on a lined baking sheet.
- Bake the cookies: Bake for 8-10 minutes, until the edges are firm. Let cool on a wire rack.
- Make the icing: In a mixing bowl, combine powdered sugar, warm water, meringue powder, and cream of tartar until smooth.
- Decorate the cookies: Use the icing to decorate the cooled cookies and add sprinkles as desired.
