- 1 wheel of Brie cheese (about 226g or 8 oz)
- 1 cup pistachios (finely chopped; approximately 150g)
- 1 tablespoon fresh rosemary (chopped)
- 1 sheet puff pastry (thawed)
- 1 egg (for egg wash)
- Honey (optional, for drizzling)
Instructions
- Preheat your oven to 400°F (200°C).
- Roll out the puff pastry on a lightly floured surface and cut it into squares large enough to wrap around a wedge of Brie (about 4 inches by 4 inches).
- Place a piece of Brie in the center of each pastry square.
- In a small bowl, mix together the finely chopped pistachios and chopped rosemary.
- Sprinkle the pistachio mixture generously over the Brie, covering the top.
- Fold the pastry over the Brie to seal it and pinch the edges to secure.
- In a small bowl, whisk the egg and use it as an egg wash by brushing it over the wrapped Brie bites.
- Place the bites on a baking sheet lined with parchment paper and bake for 15-20 minutes, or until they are golden brown.
- Remove from the oven and drizzle with honey, if desired, while they’re still warm.
- Serve warm and enjoy!
Notes
Can be prepared in advance and refrigerated. Best served warm but can be enjoyed at room temperature.
