- 8 oz pasta (rotini, fusilli, or bow-tie), cooked and cooled
- 1 cup cherry tomatoes, halved
- 2 tablespoons capers, drained
- 3 tablespoons extra-virgin olive oil
- 2 tablespoons lemon juice, freshly squeezed
- 1/2 teaspoon salt (adjust to taste)
- 1/4 teaspoon black pepper (freshly ground)
- 2 tablespoons fresh herbs (parsley or basil), chopped — optional
Instructions
- Cook the pasta according to package directions until al dente, then drain and rinse under cold water to stop cooking.
- Combine the cooled pasta, halved cherry tomatoes, and drained capers in a large bowl.
- Whisk together the olive oil, lemon juice, salt, and pepper in a small bowl until the dressing is smooth.
- Pour the dressing over the pasta mixture and toss until everything is evenly coated.
- Add the chopped fresh herbs if using, and toss lightly to distribute.
- Taste and adjust seasoning with more salt, pepper, or lemon juice as needed.
- Chill for 10–15 minutes before serving to let the flavors meld, or serve right away for a room-temperature salad.
Notes
Use fresh lemon juice for the brightest flavor. Store leftovers in an airtight container for up to 4 days.
