  • 1 cup cherry tomatoes, halved
  • 2 tablespoons capers, drained
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons lemon juice, freshly squeezed
  • 1/2 teaspoon salt (adjust to taste)
  • 1/4 teaspoon black pepper (freshly ground)
  • 2 tablespoons fresh herbs (parsley or basil), chopped — optional

Instructions

  1. Cook the pasta according to package directions until al dente, then drain and rinse under cold water to stop cooking.
  2. Combine the cooled pasta, halved cherry tomatoes, and drained capers in a large bowl.
  3. Whisk together the olive oil, lemon juice, salt, and pepper in a small bowl until the dressing is smooth.
  4. Pour the dressing over the pasta mixture and toss until everything is evenly coated.
  5. Add the chopped fresh herbs if using, and toss lightly to distribute.
  6. Taste and adjust seasoning with more salt, pepper, or lemon juice as needed.
  7. Chill for 10–15 minutes before serving to let the flavors meld, or serve right away for a room-temperature salad.

Notes
