Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Whisk together the flour, cocoa powder, baking powder, and salt in a mixing bowl. Set aside.
  3. Cream the butter and sugar in a large bowl until light and fluffy.
  4. Beat in the egg and vanilla extract, mixing until well combined.
  5. Add the red food coloring to the mixture and stir until evenly distributed.
  6. Gradually add the dry ingredients to the wet mixture, stirring just until combined.
  7. Chill the dough in the refrigerator for about 15 minutes to firm up.
  8. Scoop and roll the dough into balls, then roll each ball in powdered sugar until well coated.
  9. Place the balls on the prepared baking sheet, spacing them about 2 inches apart.
  10. Bake for 10-12 minutes, until the edges are set but the centers are still soft.
  11. Let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Don’t overmix the dough after adding the dry ingredients to keep the cookies tender. Chill the dough if it feels too soft to handle.
