  • 1 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract or vanilla bean paste
  • 2 ½ cups + 2 tbsp all-purpose flour
  • ½ teaspoon fine sea salt
  • ½ teaspoon baking soda
  • 2/3 cup strawberry preserves
  • 1 cup powdered sugar
  • 1 ½-2 tbsp whole milk
  • ½ teaspoon vanilla extract
  • Rainbow sprinkles (for decorating)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking dish with parchment paper.
  2. Cream together the butter and granulated sugar in a mixing bowl until light and fluffy.
  3. Add the eggs and vanilla, mixing until well combined.
  4. In a separate bowl, whisk together the flour, sea salt, and baking soda.
  5. Gradually mix the dry ingredients into the wet mixture until just combined.
  6. Spread half of the dough into the bottom of the prepared baking dish, creating an even layer.
  7. Spread the strawberry preserves over the dough, leaving a little space around the edges.
  8. Top with the remaining dough, gently spreading it over the preserves.
  9. Bake in the preheated oven for 25-30 minutes or until golden brown.
  10. Let cool completely, then mix together powdered sugar, milk, and vanilla for icing.
  11. Drizzle the icing over the cooled bars and add rainbow sprinkles for a festive touch.
