Pistachio Rice Krispie Treats with Dark Chocolate

An elevated twist on a nostalgic favorite, these Pistachio Rice Krispie Treats are crunchy, nutty, and topped with glossy dark chocolate.

Ingredients

  • 3 tablespoons unsalted butter
  • 1 package (10 oz) marshmallows
  • 6 cups Rice Krispies cereal
  • 1 cup chopped pistachios
  • 1 cup dark chocolate chips
  • 1 teaspoon vanilla extract

Instructions

  1. In a large saucepan, melt the butter over low heat. Add the marshmallows and stir until completely melted. Remove from heat and stir in the vanilla extract.
  2. Add the Rice Krispies cereal and chopped pistachios. Stir until well combined.
  3. Press the mixture into a greased 9×13 inch pan evenly.
  4. Melt dark chocolate chips in the microwave or over a double boiler. Drizzle or spread the melted chocolate over the Rice Krispie mixture.
  5. Allow to cool at room temperature until the chocolate is set, then cut into squares and serve.

Notes

For a vegan version, substitute coconut oil for butter and use vegan marshmallows. Store in an airtight container for up to 3 days or freeze for up to 3 months.
