- 3 tablespoons unsalted butter
- 1 package (10 oz) marshmallows
- 6 cups Rice Krispies cereal
- 1 cup chopped pistachios
- 1 cup dark chocolate chips
- 1 teaspoon vanilla extract
Instructions
- In a large saucepan, melt the butter over low heat. Add the marshmallows and stir until completely melted. Remove from heat and stir in the vanilla extract.
- Add the Rice Krispies cereal and chopped pistachios. Stir until well combined.
- Press the mixture into a greased 9×13 inch pan evenly.
- Melt dark chocolate chips in the microwave or over a double boiler. Drizzle or spread the melted chocolate over the Rice Krispie mixture.
- Allow to cool at room temperature until the chocolate is set, then cut into squares and serve.
Notes
For a vegan version, substitute coconut oil for butter and use vegan marshmallows. Store in an airtight container for up to 3 days or freeze for up to 3 months.
