- 1 cup (125 g) all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup (113 g) unsalted butter, melted
- 1/2 cup (100 g) granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup (60 g) finely ground pistachios
- 1 cup (170 g) white chocolate, chopped
Instructions
- Preheat the oven to 375°F (190°C) and grease and flour a madeleine pan.
- In a bowl, whisk together the flour, baking powder, and salt.
- In another bowl, mix the melted butter with the sugar until combined.
- Add the eggs one at a time, whisking well after each addition, then stir in the vanilla.
- Gradually fold in the dry ingredients and ground pistachios until just combined.
- Spoon the batter into the prepared madeleine pan, filling each cavity about 3/4 full.
- Bake for 10–12 minutes or until the edges are golden and the center springs back when touched.
- Allow to cool in the pan for a few minutes before transferring to a wire rack.
- Melt the white chocolate and dip the cooled madeleines into the chocolate, letting them set on parchment paper.
Notes
For a crisper shell, use a metal pan instead of silicone. Chill the dough for 10 minutes for fluffier results.
