Ingredients

  • 1 cup creamy peanut butter, at room temperature
  • 1/2 cup powdered sugar
  • 1 cup dairy-free chocolate chips
  • A pinch of sea salt
  • Optional: 2 tablespoons softened butter

Instructions

  1. Mix the peanut butter and powdered sugar in a bowl until smooth and thick.
  2. Stir in a pinch of sea salt and taste; adjust if you like a touch more salt.
  3. Scoop small portions (about 1 inch) and roll into balls with clean hands.
  4. Place the balls on a parchment-lined tray and chill for 20–30 minutes until firm.
  5. Melt the dairy-free chocolate chips in a heatproof bowl over simmering water or in short bursts in the microwave, stirring until smooth.
  6. Dip each chilled peanut ball into the melted chocolate, leaving a small circle of peanut butter visible on top.
  7. Set the dipped balls back on the parchment and chill again until the chocolate is set, about 15 minutes.
  8. Serve or store as directed below.

Notes

Chill the centers well for quick chocolate setting. Use room-temperature peanut butter for easier mixing.
