- 1 cup creamy peanut butter, at room temperature
- 1/2 cup powdered sugar
- 1 cup dairy-free chocolate chips
- A pinch of sea salt
- Optional: 2 tablespoons softened butter
Instructions
- Mix the peanut butter and powdered sugar in a bowl until smooth and thick.
- Stir in a pinch of sea salt and taste; adjust if you like a touch more salt.
- Scoop small portions (about 1 inch) and roll into balls with clean hands.
- Place the balls on a parchment-lined tray and chill for 20–30 minutes until firm.
- Melt the dairy-free chocolate chips in a heatproof bowl over simmering water or in short bursts in the microwave, stirring until smooth.
- Dip each chilled peanut ball into the melted chocolate, leaving a small circle of peanut butter visible on top.
- Set the dipped balls back on the parchment and chill again until the chocolate is set, about 15 minutes.
- Serve or store as directed below.
Notes
Chill the centers well for quick chocolate setting. Use room-temperature peanut butter for easier mixing.
