Overnight Croissant Breakfast Casserole

A delicious and easy breakfast casserole featuring buttery croissants, eggs, and cheese, perfect for busy mornings.

  • Total Time: 50 minutes
  • Yield: 8 servings

Ingredients

Scale
  • 6 croissants, torn into pieces
  • 8 eggs
  • 2 cups milk
  • 1 cup shredded cheese (e.g., cheddar or Swiss)
  • 1/2 cup cooked and crumbled bacon or sausage (optional)
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon (optional)

Instructions

  1. Tear the croissants into small pieces and place them in a greased 9×13-inch baking dish.
  2. Whisk together the eggs, milk, sugar, vanilla extract, salt, and cinnamon in a large bowl until well combined.
  3. Pour the egg mixture evenly over the croissant pieces in the baking dish.
  4. Sprinkle shredded cheese and, if desired, cooked bacon or sausage over the top.
  5. Cover the dish with plastic wrap and refrigerate overnight.
  6. Preheat your oven to 350°F (175°C) the following morning.
  7. Bake the casserole for about 30-35 minutes or until it’s puffed up and the center feels set.
  8. Let it cool slightly before slicing into portions and serving warm.

Notes

Use day-old croissants for the best texture. Adjust toppings to your taste with veggies or different cheeses.
