One Pot Veggie Mac and Cheese

A quick and easy one pot meal that combines pasta, vegetables, and cheese for a creamy, comforting dish.

  • Total Time: 25 minutes
  • Yield: 4 servings

Ingredients

Scale
  • 8 oz elbow macaroni
  • 2 cups vegetable broth
  • 1 cup milk
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 cup mixed vegetables (like broccoli, carrots, and peas)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the mixed vegetables and sauté for about 3-4 minutes.
  3. Stir in the elbow macaroni, vegetable broth, and milk.
  4. Bring to a boil, then reduce heat and simmer until the pasta is tender, about 8-10 minutes.
  5. Remove from heat and stir in the shredded cheese until melted and creamy.
  6. Season with garlic powder, salt, and pepper.
  7. Serve warm.

Notes

Use a pot large enough to allow the pasta to move while cooking. Stir often to prevent sticking and taste before adding salt.
