One-Pan Balsamic Chicken

An easy and delicious one-pan meal featuring tender chicken breasts, zesty balsamic vinegar, and fresh veggies, perfect for busy weeknights.

Ingredients

  • 4 chicken breasts
  • 1 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup cherry tomatoes
  • 2 cups spinach
  • Fresh basil for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season the chicken breasts with salt, pepper, and dried oregano.
  3. Heat olive oil in a large oven-safe skillet over medium heat.
  4. Add the chicken breasts to the skillet and sear for about 5 minutes on each side until golden brown.
  5. Pour in the balsamic vinegar and add minced garlic.
  6. Add cherry tomatoes on top of the chicken.
  7. Transfer the skillet to the preheated oven and bake for 15 minutes.
  8. Remove the skillet from the oven, and stir in the fresh spinach until wilted.
  9. Garnish with fresh basil before serving.

Notes

Don’t rush the searing process to lock in juices and flavor. Use high-quality balsamic vinegar for the best taste. Feel free to substitute with other vegetables you love.
