- 4 chicken breasts
- 1 cup balsamic vinegar
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 cup cherry tomatoes
- 2 cups spinach
- Fresh basil for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Season the chicken breasts with salt, pepper, and dried oregano.
- Heat olive oil in a large oven-safe skillet over medium heat.
- Add the chicken breasts to the skillet and sear for about 5 minutes on each side until golden brown.
- Pour in the balsamic vinegar and add minced garlic.
- Add cherry tomatoes on top of the chicken.
- Transfer the skillet to the preheated oven and bake for 15 minutes.
- Remove the skillet from the oven, and stir in the fresh spinach until wilted.
- Garnish with fresh basil before serving.
Notes
Don’t rush the searing process to lock in juices and flavor. Use high-quality balsamic vinegar for the best taste. Feel free to substitute with other vegetables you love.
