No Bake Peppermint Tart

  • 1 1/2 cups almond flour
  • 1/4 cup coconut oil, melted
  • 2 tablespoons maple syrup
  • 1 cup dark chocolate chips
  • 1/2 cup coconut milk
  • 1 teaspoon peppermint extract
  • Pinch of salt

Instructions

  1. In a medium bowl, mix almond flour, melted coconut oil, maple syrup, and salt until combined.
  2. Press the mixture firmly into the bottom of a 9-inch tart pan to form an even layer.
  3. In a small saucepan over low heat, melt dark chocolate chips and coconut milk together, stirring until smooth and creamy.
  4. Remove from heat and stir in peppermint extract until well blended.
  5. Pour the chocolate mixture into the crust, smoothing it out evenly.
  6. Refrigerate for at least 2 hours, or until set.
