- 1 cup creamy peanut butter, at room temperature
- 1/2 cup honey, warmed slightly
- 2 cups powdered sugar, sifted if lumpy
- 1 cup graham cracker crumbs
- 1 cup chocolate chips, semi-sweet or milk chocolate
- 1 tablespoon coconut oil or butter (optional)
Instructions
- Line an 8×8-inch pan with parchment paper, letting extra hang over the sides for easy lifting.
- Stir the peanut butter and honey in a medium bowl until smooth and combined.
- Add the powdered sugar and mix with a spatula until it starts to form a dough.
- Fold in the graham cracker crumbs until the mixture is even and slightly crumbly but holds together when pressed.
- Press the mixture firmly into the prepared pan in an even layer.
- Melt the chocolate chips with coconut oil or butter in short bursts in the microwave (20–30 seconds), stirring between bursts, or melt in a heatproof bowl over simmering water.
- Pour the melted chocolate over the peanut butter layer and spread it evenly with a spatula.
- Chill the pan in the fridge for at least 1 hour, or until the chocolate is set.
- Lift the bars out using the parchment overhang and cut into squares. Serve chilled or at cool room temperature.
Notes
Press the peanut butter layer firmly for best results. Use a sharp knife warmed under hot water for clean slices.
