No-Bake Peanut Butter Buckeye Bars

Quick and easy no-bake bars that deliver the classic peanut butter buckeye flavor with less fuss.

  • 1 cup creamy peanut butter, at room temperature
  • 1/2 cup honey, warmed slightly
  • 2 cups powdered sugar, sifted if lumpy
  • 1 cup graham cracker crumbs
  • 1 cup chocolate chips, semi-sweet or milk chocolate
  • 1 tablespoon coconut oil or butter (optional)

Instructions

  1. Line an 8×8-inch pan with parchment paper, letting extra hang over the sides for easy lifting.
  2. Stir the peanut butter and honey in a medium bowl until smooth and combined.
  3. Add the powdered sugar and mix with a spatula until it starts to form a dough.
  4. Fold in the graham cracker crumbs until the mixture is even and slightly crumbly but holds together when pressed.
  5. Press the mixture firmly into the prepared pan in an even layer.
  6. Melt the chocolate chips with coconut oil or butter in short bursts in the microwave (20–30 seconds), stirring between bursts, or melt in a heatproof bowl over simmering water.
  7. Pour the melted chocolate over the peanut butter layer and spread it evenly with a spatula.
  8. Chill the pan in the fridge for at least 1 hour, or until the chocolate is set.
  9. Lift the bars out using the parchment overhang and cut into squares. Serve chilled or at cool room temperature.

Notes

Press the peanut butter layer firmly for best results. Use a sharp knife warmed under hot water for clean slices.
