- 1 cup graham cracker crumbs
- 1/4 cup sugar

- 16 oz cream cheese, softened
- 1/2 cup sugar
- 1 tsp vanilla extract
- 2 large eggs
- 1/2 cup sour cream

Instructions
- Preheat the oven to 325°F (160°C). Line a cupcake pan with paper liners.
- In a medium bowl, combine the graham cracker crumbs, 1/4 cup of sugar, and melted butter. Stir until well combined.
- Divide the graham cracker mixture evenly into the lined cupcake cups, pressing firmly to form a crust at the bottom.
- In a large bowl, beat the softened cream cheese with 1/2 cup of sugar until smooth and creamy.
- Mix in the eggs one at a time, blending well after each addition.
- Stir in the sour cream and vanilla extract until combined.
- Spoon the cheesecake mixture over the crusts, filling each nearly to the top.
- Place the pan in the preheated oven and bake for about 20-25 minutes, or until the cheesecakes are set but still slightly jiggly in the center.
- Remove from the oven and let cool. Once cool, top with colorful sprinkles.
