  • 1/4 cup sugar
  • 1/2 cup butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 1/2 cup sour cream
  • Colorful sprinkles for topping

Instructions

  1. Preheat the oven to 325°F (160°C). Line a cupcake pan with paper liners.
  2. In a medium bowl, combine the graham cracker crumbs, 1/4 cup of sugar, and melted butter. Stir until well combined.
  3. Divide the graham cracker mixture evenly into the lined cupcake cups, pressing firmly to form a crust at the bottom.
  4. In a large bowl, beat the softened cream cheese with 1/2 cup of sugar until smooth and creamy.
  5. Mix in the eggs one at a time, blending well after each addition.
  6. Stir in the sour cream and vanilla extract until combined.
  7. Spoon the cheesecake mixture over the crusts, filling each nearly to the top.
  8. Place the pan in the preheated oven and bake for about 20-25 minutes, or until the cheesecakes are set but still slightly jiggly in the center.
  9. Remove from the oven and let cool. Once cool, top with colorful sprinkles.
