- 1 lb boneless, skinless chicken thighs
- 1 tablespoon olive oil
- 2 teaspoons dried oregano
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 4 pita breads
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 red onion, thinly sliced
- 1 cup plain Greek yogurt
- 1/2 cup feta cheese, crumbled
- 1 tablespoon lemon juice
- 1 clove garlic, minced
- Fresh parsley for garnish
Instructions
- Marinate the chicken by mixing olive oil, oregano, garlic powder, salt, and pepper in a bowl. Coat the chicken thighs and let them marinate for at least 30 minutes.
- Heat a skillet over medium-high heat and cook the marinated chicken for about 5-7 minutes on each side until golden brown and cooked through.
- Prepare the tzatziki sauce by mixing Greek yogurt, feta cheese, lemon juice, minced garlic, and a pinch of salt and pepper until smooth.
- Once cooked, slice the chicken into strips. Spread tzatziki on each pita, add sliced chicken, and top with cherry tomatoes, cucumber, and red onion.
- Roll up the pita and enjoy!
Notes
For best flavor, marinate the chicken longer. Use fresh vegetables and consider toasting the pita for added texture.
