- 3 Tablespoons Olive oil (or avocado oil, ghee)
- 1 lb Ground Beef (sub: ground turkey or chicken)
- 1 Sweet Onion (chopped)
- 1 Orange Bell Pepper (seeded, chopped)
- 3 cloves Garlic (chopped)
- 14 oz can Fire-Roasted Diced Tomatoes
- 1/2 tsp Smoked Paprika
- 1/2 tsp Dried Oregano
- 1/2 tsp Garlic Powder
- 1/2 tsp Onion Powder
- To taste Salt & Black Pepper
- 1 small Head Green Cabbage (cored, chopped)
- 2 cups Shredded Cheddar/Jack Cheese (sub: mozzarella or vegan cheese)
Instructions
- Saute oil, beef, onion, and orange pepper over medium/high heat in a large pan or Dutch oven until the beef is browned and onions are translucent.
- Add garlic and saute for 1 more minute.
- Stir in tomatoes, spices, salt, and pepper. Top with cabbage. Cover and cook for 15-20 minutes or until cabbage is tender.
- Top with cheese, cover until melted, then serve. For a golden top, finish under the broiler for 1–2 minutes.
Notes
Store cooled casserole in an airtight container for up to 4 days. Can be frozen in portions for up to 3 months.
