Lentil and Rice Cabbage Rolls

These cozy, fiber-forward Lentil and Rice Cabbage Rolls are hearty yet light, perfect for a nutritious weeknight dinner.

  • 1 head Green cabbage
  • 1 cup Cooked lentils
  • 1 cup Cooked rice
  • 1 medium Onion, finely chopped
  • 2 cloves Garlic, minced
  • 1 can (15 oz) Tomato sauce
  • 1 teaspoon Paprika
  • 1 teaspoon Cumin
  • Salt & pepper, to taste
  • Fresh herbs (parsley or dill), to garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Carefully remove the leaves from the cabbage and blanch them in boiling water for about 2 minutes until pliable.
  3. In a bowl, mix the cooked lentils, cooked rice, chopped onion, minced garlic, paprika, cumin, salt, and pepper.
  4. Place a spoonful of the mixture into each cabbage leaf, roll it tightly, and tuck in the sides.
  5. Spread some tomato sauce on the bottom of a baking dish, arrange the cabbage rolls seam side down, and pour the remaining tomato sauce over them.
  6. Cover with foil and bake for 30-35 minutes.
  7. Garnish with fresh herbs before serving.
  8. Let the rolls rest 5–10 minutes after baking before serving.

Notes

Ensure there’s a thin layer of sauce in the dish and pour sauce over rolls before baking to avoid dryness.
