- 4 cups kale, chopped
- 1/4 cup grated Parmesan cheese
- 1/2 cup croutons
- 1 lemon, juiced
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions
- Wash and chop the kale into bite-sized pieces.
- In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.
- Drizzle the dressing over the chopped kale and toss it well to coat every leaf.
- Sprinkle the grated Parmesan cheese on top.
- Add croutons and give it one last gentle toss before serving.
Notes
Massage the kale to soften it, and adjust the lemon juice according to your taste. You can also add grilled chicken or chickpeas for extra protein.
