Lego Potato Bites

Fun-shaped potato snacks that are crispy on the outside and full of flavor, perfect for kids and adults alike.

Ingredients

  • 3 large (about 600 g) Russet Potatoes, peeled and shredded
  • 1 teaspoon (5 g) Garlic Powder
  • 1 teaspoon (5 g) Onion Powder
  • 1 teaspoon (6 g) Salt
  • ½ teaspoon (2 g) Black Pepper
  • 2 tablespoons (15 g) Cornstarch
  • 2 tablespoons (30 ml) Olive Oil
  • 1 tablespoon (5 g) Fresh Parsley, finely chopped (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Place your silicone Lego mold on a baking sheet and lightly brush it with olive oil.
  2. In a large bowl, mix together shredded potatoes, garlic powder, onion powder, salt, black pepper, cornstarch, and parsley (if using). Use your hands to combine thoroughly.
  3. Ensure the Lego mold is fully oiled.
  4. Press the potato mixture firmly into each cavity of the mold and pack it tightly.
  5. Bake for 30–35 minutes until the edges turn golden brown. For an extra crisp finish, broil for 1–2 minutes, watching closely.
  6. Let the bites cool for about 5 minutes before gently popping them out of the mold. Garnish with more parsley if desired.
  7. Serve with your favorite dipping sauces!

Notes

You can prep these bites in advance and keep the potato mixture refrigerated for up to 24 hours before baking. Store leftovers in an airtight container for up to 3 days.
