5-Star Pot Roast Slow Cooker

Ingredients

  • 34 lb chuck roast
  • 1 tbsp olive oil
  • 1 onion, sliced
  • 4 carrots, cut into chunks
  • 4 gold potatoes, quartered
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1 bay leaf

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat. Sear the chuck roast on all sides until it’s nicely browned.
  2. Place the sliced onion, carrots, and potatoes at the bottom of the slow cooker.
  3. Put the seared chuck roast on top of the vegetables.
  4. In a bowl, combine the beef broth, Worcestershire sauce, garlic, salt, pepper, thyme, and bay leaf. Pour this mixture over the roast and veggies.
  5. Cover the slow cooker and set it on low. Let it cook for about 480 minutes or until the beef is fork-tender.
  6. Once done, remove the roast and veggies, slice, and enjoy! Use some of the broth as a delicious gravy.

Notes

Searing the roast adds great flavor. Adjust seasoning to your taste. Use fresh veggies for best results.
