- 3–4 lb chuck roast
- 1 tbsp olive oil
- 1 onion, sliced
- 4 carrots, cut into chunks
- 4 gold potatoes, quartered
- 3 cloves garlic, minced
- 2 cups beef broth
- 1 tbsp Worcestershire sauce
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1 bay leaf
Instructions
- Heat the olive oil in a large skillet over medium-high heat. Sear the chuck roast on all sides until it’s nicely browned.
- Place the sliced onion, carrots, and potatoes at the bottom of the slow cooker.
- Put the seared chuck roast on top of the vegetables.
- In a bowl, combine the beef broth, Worcestershire sauce, garlic, salt, pepper, thyme, and bay leaf. Pour this mixture over the roast and veggies.
- Cover the slow cooker and set it on low. Let it cook for about 480 minutes or until the beef is fork-tender.
- Once done, remove the roast and veggies, slice, and enjoy! Use some of the broth as a delicious gravy.
Notes
Searing the roast adds great flavor. Adjust seasoning to your taste. Use fresh veggies for best results.
