How to enhance the mango flavor in ice cream

How to enhance the mango flavor in ice cream ?

Creating a rich, vibrant mango ice cream requires a balance of natural fruitiness, sweetness, and texture. Here are key ways to intensify the mango flavor

  • Total Time: Varies
  • Yield: About 1 cup of extract or 2 cups of concentrate 1x

Ingredients

Scale

For Mango Extract :

2 large ripe mangoes

1 cup food-grade glycerin

½ cup filtered water

For Mango Concentrate:

4 large ripe mangoes

½ cup sugar (or honey, optional)

¼ cup lemon juice (preserves freshness)

¼ cup water

Instructions

Mango Extract :

Prepare the Mangoes: Peel and chop the mangoes into small pieces.

Combine with Glycerin & Water: Place the mango pieces in a sterilized glass jar. Pour the food-grade glycerin and water over them, ensuring they are fully submerged.

Steep: Seal the jar and store it in a cool, dark place for 6–8 weeks, shaking gently every few days.

Strain & Store: Strain the liquid through a fine-mesh sieve or cheesecloth into a clean bottle. Store in a cool, dark place or refrigerate for extended shelf life.

Mango Concentrate:

Blend the Mangoes: Puree mango flesh until smooth.

Cook the Mixture: In a saucepan, combine the mango puree, sugar (if using), lemon juice, and water. Simmer on low heat for 10–15 minutes, stirring frequently.

Reduce to Concentrate: Continue cooking until the mixture thickens to a syrup-like consistency.

Cool & Store: Let it cool before transferring to a sterilized bottle or jar. Refrigerate for up to 2 weeks or freeze for longer storage.

Notes

  • Glycerin provides a mild sweetness and helps preserve the extract.
  • Use ripe, sweet mangoes for the best flavor.
  • The extract works well in baking, smoothies, and flavoring drinks.
  • The concentrate is perfect for juices, syrups, sorbets, and glazes.
  • For a sugar-free version, omit sugar or use a natural sweetener like stevia.
