- 2 boneless skinless chicken breasts
- 3 tablespoons honey
- 2 tablespoons lime juice (fresh preferred)
- 1 cup cilantro lime rice (cooked)
- 1 avocado, sliced
- Salt & pepper to taste
- Fresh cilantro for garnish
Instructions
- Marinate chicken breasts in honey, lime juice, salt, and pepper for at least 30 minutes.
- Grill or pan-sear the chicken until cooked through, about 6–7 minutes per side.
- While the chicken is cooking, prepare the cilantro lime rice according to package instructions.
- Once cooked, slice the chicken into strips.
- In a serving dish, layer the rice, sliced chicken, and avocado.
- Garnish with fresh cilantro and additional lime juice if desired. Serve immediately.
Notes
For a tidier stack, use a ring mold to shape the rice. Ideal for meal prep; store components separately to maintain freshness.
