Honey Lime Chicken & Avocado Rice Stack

Ingredients

  • 2 boneless skinless chicken breasts
  • 3 tablespoons honey
  • 2 tablespoons lime juice (fresh preferred)
  • 1 cup cilantro lime rice (cooked)
  • 1 avocado, sliced
  • Salt & pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Marinate chicken breasts in honey, lime juice, salt, and pepper for at least 30 minutes.
  2. Grill or pan-sear the chicken until cooked through, about 6–7 minutes per side.
  3. While the chicken is cooking, prepare the cilantro lime rice according to package instructions.
  4. Once cooked, slice the chicken into strips.
  5. In a serving dish, layer the rice, sliced chicken, and avocado.
  6. Garnish with fresh cilantro and additional lime juice if desired. Serve immediately.

Notes

For a tidier stack, use a ring mold to shape the rice. Ideal for meal prep; store components separately to maintain freshness.
