- 1/2 cup (1 stick) unsalted butter
- 1 cup heavy cream
- 1 1/2 cups freshly grated Parmesan cheese
- 1–2 cloves garlic, minced
- Salt and freshly ground black pepper to taste (optional)
Instructions
- Melt the butter in a medium skillet over medium-low heat.
- Sauté the minced garlic in the melted butter for 30–45 seconds until fragrant (do not brown).
- Pour in the heavy cream and bring to a gentle simmer, stirring often.
- Reduce heat to low and whisk in the freshly grated Parmesan a little at a time until the sauce is smooth and thickened.
- Season with salt and plenty of freshly ground black pepper, taste, and adjust.
- Toss the sauce with hot cooked pasta (reserve a little pasta water to loosen the sauce if needed) and serve immediately.
Notes
Use freshly grated Parmesan for a silkier sauce. Reheat gently and add a splash of cream or pasta water if needed.
