Instructions

  1. Grate the sweet potatoes using a box grater or food processor.
  2. Squeeze out excess moisture from the grated sweet potatoes using a clean kitchen towel.
  3. Heat olive oil in a large skillet over medium heat.
  4. Add the chopped onion and sauté until soft, about 3-4 minutes.
  5. Stir in the grated sweet potatoes and season with salt, pepper, and any optional spices you like.
  6. Cook for 3-4 minutes without stirring, allowing the bottom to crisp up.
  7. Flip the hash browns using a large spatula to cook the other side for another 3-4 minutes until golden brown.
  8. Remove from heat and let cool slightly before serving.
