- 2 large sweet potatoes, peeled and grated
- 1 small onion, chopped
- 2 tablespoons olive oil

Instructions
- Grate the sweet potatoes using a box grater or food processor.
- Squeeze out excess moisture from the grated sweet potatoes using a clean kitchen towel.
- Heat olive oil in a large skillet over medium heat.
- Add the chopped onion and sauté until soft, about 3-4 minutes.
- Stir in the grated sweet potatoes and season with salt, pepper, and any optional spices you like.
- Cook for 3-4 minutes without stirring, allowing the bottom to crisp up.
- Flip the hash browns using a large spatula to cook the other side for another 3-4 minutes until golden brown.
- Remove from heat and let cool slightly before serving.
