- 1 lb chicken breast, boneless and skinless
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 cups chicken broth
- 1 tablespoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Optional toppings: avocado, cilantro, or lime wedges
Instructions
- Place the chicken at the bottom of the slow cooker.
- Add the black beans, corn, and diced tomatoes on top of the chicken.
- Sprinkle in the chopped onion and minced garlic for an extra flavor boost.
- Pour the chicken broth over the entire mixture.
- Season with chili powder, cumin, salt, and pepper.
- Stir gently to combine all the ingredients.
- Cover the slow cooker and cook on low for about 360 minutes, or on high for 240 minutes.
- Shred the chicken with two forks before serving.
- Serve hot with your choice of toppings, such as avocado or cilantro.
Notes
Use fresh vegetables for a brighter flavor. Adjust the spices according to your preference for heat.
