- 1 pound shrimp, peeled and deveined

Instructions
- In a skillet over medium heat, cook the shrimp for about 3-4 minutes until they turn pink and opaque. Season with salt and pepper.
- While the shrimp cooks, dice the cucumber and slice the green onions. Chop your choice of fresh herbs.
- In a bowl, combine Greek yogurt, lime juice, salt, and pepper. Mix until smooth.
- In a large bowl, combine the cooked shrimp, diced cucumber, green onions, and chopped herbs.
- Pour the yogurt dressing over the salad and toss gently to coat all ingredients evenly.
- Enjoy immediately or chill in the fridge for a bit to let the flavors meld.
