Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the diced chicken breasts and thighs to the skillet, cooking until they are golden brown and cooked through, about 5-7 minutes.
- Stir in the ground chicken, breaking it apart, and let it cook for an additional 5 minutes.
- Toss in the carrots, bell peppers, and broccoli, mixing everything together.
- Sprinkle with salt, pepper, and garlic powder, then stir to incorporate the spices well.
- Pour in the broth and add curry paste if using, bringing the mixture to a light simmer.
- Cook for another 10 minutes, allowing the veggies to soften and the flavors to meld.
- Serve over a bed of lettuce or greens for a refreshing touch.
