- 1.5 lbs (700g) baby potatoes, halved or quartered
- 1 block (7 oz/200g) feta cheese
- 1.5 cups cherry tomatoes, halved
- 3 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- ½ teaspoon black pepper
- Salt to taste
- Fresh basil or parsley, for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Toss the baby potatoes in a large mixing bowl with olive oil, garlic, dried oregano, black pepper, and a pinch of salt until evenly coated.
- Spread the seasoned potatoes onto a baking sheet in a single layer and bake for about 20 minutes, or until tender and lightly browned.
- Remove from the oven and add the halved cherry tomatoes and feta cheese on top of the potatoes.
- Return to the oven and bake for an additional 10-15 minutes, or until the feta is golden and the tomatoes are bursting with juices.
- Garnish with fresh basil or parsley before serving, and enjoy!
Notes
Allow the potatoes to crisp up for maximum flavor and use high-quality feta for the best texture. Experiment with different herbs for a unique twist.
