Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the sweet potatoes into ¼ inch rounds and place them on a baking sheet.
  3. Drizzle olive oil over the rounds, and season with salt and pepper to taste.
  4. Bake for about 20-25 minutes, flipping halfway through, until they are golden and tender.
  5. Once out of the oven, drizzle honey over the warm sweet potato rounds and sprinkle crumbled feta on top.
