- 2 large sweet potatoes (about 680g each)
- ½ cup feta cheese, crumbled (about 75g)
- ¼ cup honey (about 85g)
- 2 tablespoons olive oil (about 30ml)
- Salt and pepper to taste
- Fresh herbs for garnish (like thyme or parsley)
Instructions
- Preheat your oven to 400°F (200°C).
- Slice the sweet potatoes into ¼ inch rounds and place them on a baking sheet.
- Drizzle olive oil over the rounds, and season with salt and pepper to taste.
- Bake for about 20-25 minutes, flipping halfway through, until they are golden and tender.
- Once out of the oven, drizzle honey over the warm sweet potato rounds and sprinkle crumbled feta on top.
- Garnish with fresh herbs before serving. Enjoy!
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, place in a preheated oven at 350°F (175°C) for about 10-15 minutes.
