Instructions

  1. Slice the radishes thinly (about 1/8″ thick) so they stay crisp and easy to eat.
  2. Zest the lemon, then squeeze the juice into a small bowl.
  3. Whisk the lemon juice, lemon zest, and olive oil together until combined.
  4. Toss the sliced radishes in the lemon-olive oil dressing.
  5. Add the grated Parmesan and torn dill, then season with salt and black pepper.
  6. Let the salad sit 5–10 minutes so the flavors meld and the radishes soften just slightly.
  7. Sprinkle extra Parmesan on top and serve chilled or at room temperature.
