Gingerbread Crinkle Cookies

  • 1 teaspoon baking soda

  • 3/4 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup unsulfured molasses
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Whisk together the flour, baking soda, baking powder, ginger, cinnamon, cloves, and salt in a bowl. Set aside.
  3. Cream the softened butter and brown sugar together in a large bowl until light and fluffy.
  4. Add the molasses, egg, and vanilla extract to the butter mixture, stirring until well combined.
  5. Gradually mix the dry ingredients into the wet ingredients until everything is just combined.
  6. Scoop tablespoon-sized balls of dough and roll them in powdered sugar until well-coated.
  7. Place the dough balls on the prepared baking sheet, spacing them about two inches apart.
  8. Bake for 10-12 minutes, or until the edges are set but the centers are still soft.
  9. Cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Chill the dough for about 30 minutes for best results. Don’t overbake.
