French Strawberry Madeleines

Light, buttery madeleines studded with fresh strawberries, ready in about 30 minutes.

Ingredients

  • 1 cup All-purpose flour
  • 1/2 tsp Baking powder
  • 1/4 tsp Salt
  • 1/2 cup Unsalted butter, melted
  • 2/3 cup Sugar
  • 3 large Eggs
  • 1 tsp Vanilla extract
  • 1 cup Diced strawberries
  • Powdered sugar (to dust)

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a madeleine pan.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, beat melted butter and sugar until pale, then add eggs one at a time, mixing well. Stir in vanilla.
  4. Gradually fold in the flour mixture and then gently fold in the strawberries.
  5. Spoon batter into the prepared madeleine pan, filling each mold 3/4 full.
  6. Bake for 10-12 minutes until golden and springy to the touch.
  7. Let cool and dust with powdered sugar before serving.

Notes

Best enjoyed the day they are baked but can be stored in an airtight container for up to 3 days.
