- 4 cups cold, cooked rice
- 3 tablespoons butter
- 1 onion, diced
- 12 oz frozen peas and carrots
- 1/2 cup soy sauce
- 3 eggs, beaten
Instructions
- Heat the butter in a large skillet over medium heat.
- Add the diced onions and cook until they are translucent, about 3-4 minutes.
- Stir in the frozen peas and carrots, cooking until heated through.
- Add the cold rice and soy sauce to the skillet. Cook for a few minutes, stirring occasionally, until well combined.
- Push the rice to one side of the skillet. Pour the beaten eggs into the other side, cook until scrambled, then mix into the rice.
- Enjoy hot, garnishing with green onions or sesame seeds if desired.
Notes
Use day-old rice for the best texture. Feel free to add extra vegetables or proteins as desired.
