Freakin’ Fantastic Fried Rice

A quick and customizable fried rice dish that’s perfect for using leftover rice.

Ingredients

  • 4 cups cold, cooked rice
  • 3 tablespoons butter
  • 1 onion, diced
  • 12 oz frozen peas and carrots
  • 1/2 cup soy sauce
  • 3 eggs, beaten

Instructions

  1. Heat the butter in a large skillet over medium heat.
  2. Add the diced onions and cook until they are translucent, about 3-4 minutes.
  3. Stir in the frozen peas and carrots, cooking until heated through.
  4. Add the cold rice and soy sauce to the skillet. Cook for a few minutes, stirring occasionally, until well combined.
  5. Push the rice to one side of the skillet. Pour the beaten eggs into the other side, cook until scrambled, then mix into the rice.
  6. Enjoy hot, garnishing with green onions or sesame seeds if desired.

Notes

Use day-old rice for the best texture. Feel free to add extra vegetables or proteins as desired.
