Farmer’s Casserole

A hearty casserole filled with hash browns, ham, and cheese, perfect for busy weeknights.

Ingredients

  • 3 cups frozen hash brown potatoes (thawed)
  • 1 cup cooked ham (diced)
  • ½ cup green onions (sliced, about 4)
  • 1 cup shredded cheddar cheese
  • 4 large eggs
  • 1 (12 oz) can evaporated milk (1 ½ cups)
  • ¼ teaspoon black pepper
  • ¼ teaspoon salt
  • ¼ teaspoon dried mustard (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a baking dish or casserole dish with non-stick spray.
  3. In a large bowl, mix together the thawed hash browns, diced ham, green onions, and shredded cheese.
  4. In another bowl, whisk together the eggs, evaporated milk, black pepper, salt, and dried mustard (if using).
  5. Pour the egg mixture over the hash brown mixture and gently stir to combine.
  6. Spread the mixture evenly in the prepared baking dish.
  7. Bake for 30-35 minutes or until the casserole is set and golden on top.
  8. Let it cool for a few minutes before slicing and serving.

Notes

Thaw the hash browns beforehand to ensure even baking. Customize with veggies or different cheeses as desired.
