- 1 cup pecans, chopped
- 1 cup medjool dates, pitted
- 1 cup almond flour
- 1/4 cup maple syrup
- 2 tablespoons coconut oil, melted
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
- Combine dates and warm water in a bowl. Let it soak for about 10 minutes until soft.
- Blend the dates with melted coconut oil, vanilla extract, and salt in a food processor until smooth.
- In a large bowl, mix almond flour and chopped pecans, then add the date mixture and maple syrup. Stir until well combined.
- Press the mixture firmly into the lined baking pan to create an even layer.
- Bake in the preheated oven for about 20-25 minutes or until golden brown on the edges.
- Cool completely in the pan before cutting into bars.
Notes
Soak the dates for the best texture. Keep the mixture pressed tightly in the pan to help the bars hold shape when cut. You can experiment with different nuts.
