Crustless Ricotta Quiche

Ingredients

  • 2 cups ricotta cheese
  • 4 large eggs
  • 1 cup grated Parmesan cheese

  • 1/2 cup diced bell peppers

  • Salt & pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a pie dish with oil or butter.
  2. In a large bowl, whisk together the ricotta cheese, eggs, and milk until smooth.
  3. Stir in the grated parmesan, chopped spinach, diced bell peppers, salt, and pepper until well combined.
  4. Pour the mixture into the prepared pie dish.
  5. Bake for 30-35 minutes or until the quiche is set and lightly golden on top.
  6. Let it cool for a few minutes before slicing and serving.
