- 1 cup cottage cheese
- 2 cups fresh spinach (chopped)
- 4 large eggs
- 1 cup shredded cheddar cheese (divided)
- 1 small onion (finely chopped)
- 1 teaspoon garlic powder
- ½ teaspoon salt
- ½ teaspoon black pepper
- Nonstick cooking spray
Instructions
- Preheat the oven to 375°F (190°C) and grease a baking dish with nonstick spray.
- Sauté the chopped onion in a pan over medium heat until softened, about 5 minutes.
- In a large bowl, combine the cottage cheese, sautéed onion, spinach, eggs, garlic powder, salt, pepper, and half of the cheddar cheese. Mix well.
- Pour the mixture into the greased baking dish and top with the remaining cheddar cheese.
- Bake for 30-35 minutes until set and golden brown on top. Let cool slightly before slicing.
Notes
Use fresh spinach for the best flavor, and consider adding other vegetables or adjusting seasoning to taste.
