- 1 head of romaine lettuce – 4-5 cups, chopped
- 1 cup sliced cherry tomatoes
- 1/2 cup chopped cucumber
- 1/2 cup shredded carrots (or matchstick carrots)
- 1/3 cup diced or sliced red onion
- 1 cup croutons
- Grated parmesan cheese – optional for topping
- 1/4 cup red wine vinegar
- 1/2 cup extra virgin olive oil
- 1 tablespoon Dijon mustard
- 1 tablespoon maple syrup
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- 1/4 teaspoon kosher salt
- 1/4 teaspoon black pepper
Instructions
- Chop the romaine lettuce and place it in a large salad bowl.
- Add the cherry tomatoes, cucumber, shredded carrots, and red onion to the bowl.
- Introduce the croutons for that perfect crunch.
- Whisk together the dressing ingredients in a separate bowl: red wine vinegar, olive oil, Dijon mustard, maple syrup, oregano, garlic powder, salt, and pepper.
- Pour the dressing over the salad mixture and gently toss until everything is well combined.
- Top with grated parmesan cheese, if desired.
