Instructions
- Prepare the Crust: Crush the Oreo cookies into fine crumbs. Mix with melted butter until combined, then press into the bottom of a springform pan. Chill in the refrigerator for 30 minutes to set.
- Make the Filling: In a large mixing bowl, beat the softened cream cheese with sugar until smooth. Add in the heavy whipping cream, vanilla, cocoa powder, and red food coloring. Mix until fluffy.
- Add Sprinkles: Gently fold in the Christmas sprinkles.
- Pour the Filling: Spoon the mixture over the chilled crust. Smooth the top and tap the pan to remove air bubbles.
- Chill the Cheesecake: Cover with plastic wrap and refrigerate for at least 4 hours or overnight.
- Decorate: Once set, remove the cheesecake from the pan. Top with whipped cream, mini Oreos, and sprinkles.
