Christmas Breakfast Casserole

A simple and heartwarming breakfast casserole that combines fluffy eggs, savory sausage, and melted cheese, perfect for Christmas morning.

  • Total Time: 45 minutes
  • Yield: 8 servings

Ingredients

Scale
  • 8 large eggs
  • 2 cups milk
  • 1 pound sausage or ham, cooked and crumbled
  • 4 cups bread cubes (or hash browns)
  • 1 ½ cups shredded cheese (such as cheddar or mozzarella)
  • 1 cup chopped vegetables (like bell peppers or spinach) – optional
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a large baking dish with cooking spray to prevent sticking.
  3. Whisk together the eggs and milk in a large bowl. Add salt and pepper.
  4. Layer the bread cubes (or hash browns) in the bottom of the prepared dish.
  5. Spread the cooked sausage or ham evenly over the bread layer.
  6. Sprinkle the chopped vegetables over the top if using.
  7. Pour the egg mixture evenly over the layers.
  8. Top with shredded cheese and let it sit for about 10 minutes before baking.
  9. Bake for 30-35 minutes or until the casserole is set and golden.

Notes

Let it cook longer if it still jiggles in the center; it needs to be firm and set. Use a variety of cheeses for extra flavor.
